114-ounce can sweetened condensed milk
1/4cupunsweetened cocoa powder
1tablespoonunsalted butter
1/2cupchocolate sprinkles
Step 1In a medium heavy bottomed saucepan, place condensed milk, cocoa powder, and butter and bring to a boil over medium heat.
Step 2When mixture starts to bubble, reduce heat to low, and cook, stirring constantly with a wooden spoon, until it looks thicker and creamier, about 8 to10 minutes. You know it is done when you swirl the pan around and the whole mixture slides as one soft piece, leaving a thick burnt residue on bottom of pan.
Step 3Slide mixture into a bowl. Don't scrape pan— you don’t want to integrate any of the burned batter from bottom of pan. Let mixture cool at room temperature, then chill in refrigerator for at least 4 hours, preferably overnight.
Step 4Using a teaspoon, scoop mixture by teaspoonful and, using your hands, roll each into a little ball about 3/4-inch in diameter (about the size of a chocolate truffle).
Step 5Place sprinkles in a shallow dish. Pass 4 to 6 brigadeiros at a time through sprinkles, making sure it sticks and covers entire outside surface. Repeat with all brigadeiros.
