Roasted Butternut Salad

INGREDIENTS:
50ml Olive Oil
2.5ml Cumin
2.5ml Cayene Pepper
2.5ml Salt
90ml Sugar
800gram Cubed raw butternut (diced medium size)
METHOD:
Mix the above ingredients and pour over the butternut. Spread it out on a baking plate or shallow dish. Heat oven at 180 degrees and place the butternut in the oven. Grill until soft but still firm.
DRESSING:
120 ml Red wine vinegar
60ml Olive oil
Half chopped red onion
GARNISH:
100g Baby spinach
150gr Feta cheese
20 Black olives
Place the baby spinach on the serving dish and toss the grilled butternut on top. Garnish with the feta and olives and drizzle the dressing oil.
