Eritrean Mild Winter Squash Stew - D'Ba Alicha

Ingredients:
4 Tablespoons Olive Oil
2 Large Onion, chopped
2 Teaspoons Ginger
1/2 Teaspoon Turmeric
1 Large Acorn Squash, cubed
2 Medium Bell Pepper, chopped
3 Cloves Garlic, chopped
8 Cups Chicken Broth
Cooking Instructions:
Saute onions in oil until browned. Add garlic, ginger, turmeric and broth. Bring to a boil. Add squash and simmer for 20 minutes. Add bell peppers and simmer for 10 more minutes. Serve.
