Latvian Breaded Roasted Potatoes (Rivmaize Cepti Kartupeli)

Ingredients:
2 Medium Eggs, Beaten
2 Cups Bread Crumbs, Toasted
6 Medium Potatoes, Boiled And Peeled
1 Can Tomatoes, Chopped
3 Tablespoons Butter
Salt And Pepper, to taste
Cooking Instructions:
Mix eggs and bread crumbs together. Roll each whole potato in the egg mixture. Bake for 45 minutes in a 375 degree oven. Saute tomatoes in butter. Add salt and pepper to taste. Top potatoes with tomatoes and serve.
