Dagwood of note

Ingredients
6 hamburger rolls, halved
4 hamburger patties
8 slices streaky bacon
8 slices cheddar cheese
2 onions, thinly slices
30 ml brown sugar
4 eggs
2 tomatoes, sliced
Dijon mustard
mayonnaise
sun-dried tomato pesto
30 ml olive oil
fresh rocket
Instructions
1. Heat the oil in a medium saucepan and gently fry the onion for a about 2 minutes then add a pinch of salt and 30 ml brown sugar. Continue cooking until the onions have a rich caramel colour then remove from the heat and set aside.
2. Mix mayonnaise and Dijon mustard and spread the rolls with the mixture.
3. Preheat the oven to 190°C.
4. Line a baking tray with foil and brush a little oil over the foil. Place the burger patties and the bacon on the tray and bake it in the hot oven for about 15 minutes until cooked to preference.
5. In a frying pan, heat a little oil and fry the eggs to preference and season with a little salt and pepper.
6. Arrange the dagwoods by starting with half a roll spread with mayo and Dijon, then some fresh rocket and a slice or two of tomato. Place a patty on top of the rocket and top the patty with a slice of cheese. Add some caramelised onions then half a roll. Now add some sun-dried tomato pesto, then 2 rashers of cooked bacon and another slice of cheddar. Top that with a fried egg and finish off with another roll half.
7. Secure the dagwood with a wooden skewer and serve immediately.
