Provolone & caramelised onion burger with chips

Chips:
Cut potatoes into “batons” or chip size portions.
Blanche in oil at 150 degrees until cooked.
Upon service, deep fry at 180 degrees until golden brown.Toss in Robertsons Masterblends Shisanyama mix and black pepper.
Burger patty:
Mince
Chilli
Garlic
Onion
Breadcrumbs
Eggs
Worstershire sauce
Robertsons mixed herbs
Mix all ingredients in a bowl and form into patties.
Relish:
1 Jar of Woolworths onion marmalade
100ml balsamic vinegar
Mix ingredients in a saucepan and bring to the boil. Let cool before assembling burger.
Assembly:
Cut Sesame bun and toast.
Smear both sides of bun with piccalilli.
Fry patty to medium rare or to taste.
Place lettuce and tomato on bottom of bun.
Place patty on top and cover with 2 slices of smokey provolone cheese.
Dollop about a tablespoon of the caramelised onion marmalade on top.
Place into basket and serve with crispy golden fries.
