Saint Lucia Plantains

Ingredients:
1 egg
1/2 cup of milk
1/2 cup of breadcrumbs
2 tablespoons of peanut butter
1 minced onion and a stick of celery
2 large plantains (green)
Salt to taste
Cooking Instructions:
First crush the cooked plantains while they are still hot then add the other ingredients. Blend well. In a moderate oven enter the dish and bake for about 25 minutes.
