Chicken and bacon club sandwiches

Ingredients
3 chicken breast fillets, trimmed
olive oil spray
4 rindless eye bacon fillets, trimmed
8 slices multigrain bread, toasted
2 tablespoons reduced-fat natural yoghurt
1/2 avocado, thinly sliced
4 cos lettuce leaves, roughly torn
2 tomatoes, thinly sliced
Method
Step 1
Heat a large, non-stick frying pan over medium-high heat. Spray chicken with oil and season with pepper. Cook for 3 to 4 minutes each side, or until light golden and cooked through. Transfer to a plate. Cover with foil.
Step 2
Add bacon to frying pan. Cook for 2 minutes each side or until crisp. Thinly slice chicken.
Step 3
Spread toast slices with yoghurt. Top 4 slices with chicken, bacon, avocado, lettuce and tomato. Top with remaining bread, yoghurt-side down. Cut sandwiches into quarters. Serve.
