Chicken croque-monsieur

Ingredients

1 roast chicken

12 thick slices white bread

2 tablespoons butter, at room temperature

Dijon mustard, for spreading

350g gruyere cheese, grated

olive oil cooking spray

Method

Step 1

Remove skin and meat from chicken. Discard skin and bones. Shred flesh.

Step 2

Preheat grill on medium-high heat. Place bread onto a board. Spread bread with butter and Dijon mustard. Top half the bread slices with half the grated cheese. Top with shredded chicken and remaining cheese. Season with salt and pepper. Cover with remaining bread slices.

Step 3

Lightly spray both sides of sandwiches with oil. Grill sandwiches for 2 to 3 minutes each side or until golden and crisp. Serve.
