Chicken quesadilla with guacamole

Ingredients
100g smoked chicken breast fillet, thinly sliced
20g baby spinach leaves
25g Greek-style feta, crumbled
20g (1/4 cup) coarsely grated vintage cheddar
1/2 small avocado, stone removed, peeled, mashed
2 teaspoons fresh lime juice
2 large flour tortillas
Method
Step 1
Combine chicken, spinach, feta and cheddar in a bowl. Combine the avocado and lime juice in a small bowl.
Step 2
Preheat a sandwich press. Top 1 tortilla with chicken mixture. Top with remaining tortilla. Cook for 5 minutes or until toasted. Cut into wedges. Serve with the guacamole.
