Corned beef and mustard jaffles

Ingredients
olive oil cooking spray
8 thick slices wholemeal bread
1/4 cup Dijon mustard
250g thinly sliced corned beef
8 gherkins, thinly sliced lengthways
Method
Step 1
Preheat a sandwich press. Spray oil over 1 side of 4 slices of bread. Place onto a flat surface, oil-side down. Spread half the mustard over bread slices.
Step 2
Top with corned beef and gherkins. Spread remaining mustard over remaining bread slices. Sandwich together. Spray with oil.
Step 3
Place sandwiches, 2 at a time, into sandwich press. Cook for 6 to 8 minutes or until golden and crisp. Serve.
