Croque madame

Ingredients
2 thick slices wholemeal bread
1 teaspoon dijon mustard
25g shaved smoked leg ham
30g thinly sliced gruyere cheese
1 tablespoon polyunsaturated margarine
1 egg
2 teaspoons chopped fresh flat-leaf parsley leaves
Method Notes
Step 1
Preheat oven to 180°C/160°C fan-forced. Line a baking tray with baking paper.
Step 2
Place 1 slice of bread on a board. Spread with mustard. Top with ham and cheese. Top with remaining slice of bread.
Step 3
Melt half the margarine in a small, non-stick frying pan over medium heat (see note). Cook sandwich for 2 minutes each side or until golden. Transfer to prepared tray. Bake for 5 minutes or until cheese has melted.
Step 4
Meanwhile, melt remaining margarine in pan over medium-high heat. Cook egg for 2 to 3 minutes or until white is set and yolk still soft.
Step 5
Top sandwich with egg. Sprinkle with parsley. Serve.
