Open sausage sandwich

Ingredients
16 chipolata sausages
4 bread rolls, split, toasted
1/2 cup fruit chutney
2 tomatoes, sliced
1 cup grated cheese
60g rocket leaves (see note) and hot chips, to serve
Method
Step 1
Preheat a barbecue plate, grill or frying pan over medium heat. Cook sausages for 6 minutes, or until golden and cooked through. Set aside to cool for 5 minutes. Using a sharp knife, split sausages lengthways so they open out flat.
Step 2
Spread each bread roll half with chutney. Top with tomato. Place 2 sausages, cut-side down, on top of tomato. Top with cheese. Place onto a baking tray.
Step 3
Preheat grill on medium heat. Grill sandwiches for 4 to 5 minutes, or until cheese is melted and sausages are warmed through. Serve with rocket and chips.
