Prawn club sandwich

Ingredients
4 Primo middle bacon rashers
32cm loaf sourdough bread, cut into 12 slices, toasted
1/4 cup aioli
2 medium tomatoes, sliced
1 large avocado, sliced
750g medium cooked tiger prawns, peeled, deveined
50g baby rocket
Shoestring fries, to serve
Method
Step 1
Heat a non-stick frying pan over medium-high heat. Add bacon. Cook, turning occasionally, for 6 to 8 minutes or until crisp. Place on a plate lined with paper towel. Cool for 2 minutes.
Step 2
Place toast on a chopping board. Spread 1 side of each piece with aioli. Top 4 pieces with one-eighth tomato, avocado and prawns. Sandwich with toast, aioli side-up. Top each with one-quarter rocket, bacon, tomato, avocado, and prawns. Season with salt and pepper. Sandwich with remaining toast, aioli side down. Cut each sandwich in half. Serve with fries.
