Super-special toasted ham and cheese sandwiches

Ingredients
2 tablespoons butter, softened
2 tablespoons wholegrain mustard
8 thick slices wholegrain, wholemeal or white bread
200g cheddar cheese, thinly sliced
250g thinly sliced or shaved leg ham
80g semi-dried tomatoes
30g baby spinach leaves
Method
1. Beat butter and mustard together until combined. Spread half the mixture over 4 slices of bread. Place onto a
piece of baking paper, butter-side down.
2. Place half the cheese on top of bread slices. Top with ham, tomatoes, spinach and remaining cheese. Season
with pepper. Top with remaining slices of bread. Spread remaining butter mixture over top of sandwiches.
3. Heat a large non-stick frying pan over medium heat. Cook each sandwich for 2 to 3 minutes each side or until
golden and toasted. Serve immediately
