Netherlands Antilles Fritter

Ingredients:
1 envelope dry yeast
3 tbs. Sugar
1/2 cup warm water
2 well-beaten eggs
1/2 cups warm water
1/2 tsp. Vanilla
1 tsp. Salt
4 cups flour
2 cups seedless raisins
3 apples, peeled and diced
Confectioners' sugar to dust
Cooking Instructions:
Put yeast and sugar in warm water and soak 10 minutes. Mix together yeast mixture and eggs, water, vanilla and salt, and add to flour slowly. Add fruit, let rise 1 1/2 hours. Drop in hot frying oil, dust with confectioners' sugar.
