Romanian Potato Soup (Sirbusca)

Ingredients:
1 Medium Onion, chopped
1 Medium Carrot, chopped
1 Medium Parsley Root, chopped
5 Large Potatoes, chopped
5 Cups Chicken Stock
1/2 Pound Bacon, cooked
Parsley, to taste
Salt And Pepper, to taste
Cooking Instructions:
Add onion, carrots, parsley root and potatoes to the stock. Simmer for 20 minutes. Add bacon, parsley, salt and pepper. Serve.
