Charred Corn

Serves 8 | Takes 40 min

Ingredients

8 corn cobs, husks attached

125g soft butter

15ml honey

handful mixed herbs (like parsley and thyme)

3ml dried chilli flakes (optional)

2 garlic cloves, crushed

grated Pecorino, to serve

Method

Gently peel husks back from corn without removing them completely. Remove silk from corn cobs. Gently pull husks back over corn again. Place corn to soak in cold water for at least 10 minutes.

Combine the butter, honey, herbs, chilli and garlic, then season (see tip).

Pat corn dry with paper towel. Cook on medium-hot coals, turning, for about 15 minutes until charred and cooked through. Set aside to cool for 2 minutes. Peel back husks. Serve corn with flavoured butter and Pecorino sprinkled over.
