Cupcakes on the braai!

Makes 10 | Takes 45 min
Ingredients
200g butternut cubes, finely grated
180ml (¾ cup) soft brown sugar
2 extra-large eggs
pinch of salt
250ml (1 cup) self-raising flour
5ml (1t) baking powder
15ml (1T) poppy seeds
zest of 1 orange
80ml vegetable oil
For the orange icing
zest of 1 orange + extra
60ml (¼ cup) sour cream
375ml (1½ cups) icing sugar, sifted
Method
Mix all the cupcake ingredients together. Fill 10 orange cases (see tip) halfway with the batter. Cover individually with foil and bake in medium coals (make spaces between the coals so the cupcakes don’t touch any) for about 30 minutes until cooked through. Cool.
For the icing, beat all the ingredients together and spoon onto the cooled cupcakes. Sprinkle extra orange zest over.
<tip> For the orange cases, cut the tops off 10 medium oranges and scoop the flesh out completely with a spoon. Squeeze the juice out of the flesh for a delicious vitamin-packed drink.
<oven baking> You can also bake these in the oven at 180°C, covered with foil, for about 50 minutes.
