Deep-fried baby marrow (Banting)

Serves 6 | Takes 30 min
Ingredients
4 large baby marrows
250ml cake flour
vegetable oil, for deep frying
Method
Cut the baby marrows into ribbons using a vegetable peeler. Season the flour and dust the baby marrow in this. Heat enough oil for deep frying on medium and cook the ribbons in batches for about 3-5 minutes until golden and crisp. Drain on kitchen towel.
