Rainbow coconut ice

Makes 20 squares | Takes 20 min
Method
Mix together 1 x 397g tin condensed milk, 5ml vanilla essence and 750ml sifted icing sugar. Mix in 300g desiccated coconut until well combined. Divide the mixture between 4 bowls and mix a few drops of different food colouring through each (we used red, green, blue and yellow).
Roll each out into a 16cm x 20cm rectangle and press on top of one another into a lined 16cm x 20cm tin. Chill in the fridge for at least 3 hours until set. Cut into squares.
Tip
This will keep for a month if stored in an airtight container.
