Spiced carrots

Serves 6 | Takes 15 min
Ingredients
4 carrots, peeled and grated
15ml olive or avocado oil
lemon juice, to taste
5ml ground cumin
5ml ground cinnamon
30ml honey
sour cream, to serve
Method
Cook the carrots in salted boiling water for about 10 minutes until tender. Drain.
Heat the oil, lemon juice and spices and fry for a minute. Mix in the honey. Season and serve with sour cream.
