White chocolate custard slices

Makes about 10 slices | Takes 1 hr
Ingredients
2 x 400g puff pastry
375ml (1½ cups) milk
375ml (1½ cups) cream
60g butter, chopped
15ml (1T) vanilla essence
160ml (⅔ cup) castor sugar
80ml (⅓ cup) cornflour
125ml (½ cup) water
6 egg yolks
200g white chocolate, chopped
Method
Preheat oven to 180°C. Line a 20cm x 30cm dish with baking paper. Roll the pastry out slightly thinner and cut into 2 x 20cm x 30cm rectangles. Place each rectangle on a baking tray lined with baking paper. Top each piece with another sheet of baking paper and a tray to weigh it down. Bake for about 25 minutes until cooked. Cool on a wire rack.
For the filling, heat the milk, cream, butter, vanilla and sugar on medium low until just before boiling point. Mix the cornflour and water into a smooth paste and whisk into the hot milk mixture. Pour the mixture into the egg yolks, beating until combined. Return to the heat and cook, while stirring, for about 10 minutes until thickened. Remove from the heat, then stir in half the chocolate until melted. Cool completely.
Place one of the pastry sheets in the prepared dish. Pour the custard over and top with the remaining pastry. Refrigerate for at least 2 hours until set. To serve, drizzle the rest of the melted chocolate over. Carefully cut into slices.
