Apple fritters

Serves 6 | Takes 45 min
Ingredients
For the cinnamon sugar (optional)
125ml (½ cup) castor sugar
15ml (1T) ground cinnamon
For the caramel sauce
250ml (1 cup) cream
250ml (1 cup) soft brown sugar
For the fritters
6 green apples
250ml (1 cup) cake flour
pinch of salt
250ml (1 cup) water
1 extra-large egg white
15ml (1T) vanilla essence
vegetable oil, for deep frying
Method
Mix the cinnamon and sugae together. Set aside.
Heat the cream and sugar on low, while stirring until the sugar dissolves. Simmer, stirring, for about 3 minutes until the sauce thickens slightly. Set aside to cool slightly.
Peel the apples and keep in water. Cut into 1cm thick rings and core with a corer or round cookie cutter.
Sift the flour and salt together and make a well in the centre. Mix the water, egg and vanilla together. Mix the wet ingredients into the dry ingredients until a smooth batter forms.
Heat enough oil for deep frying on medium. Pat some of the apple rings dry with paper towels. Dip into the batter and place into the oil, in batches, and cook for about 3-5 minutes until golden.
Drain and roll in cinnamon sugar, if using. Repeat with the rest. Serve immediately with the caramel sauce.
