Apple strudel

Serves 4-6 | Prep 15 min | Cook 15 min | Bake 30 min
Ingredients
4 Granny Smith apples, peeled,
cored & sliced
2 tbsp (30ml) castor sugar
½ tsp (3ml) ground cinnamon
8 sheets phyllo pastry
¼ cup (60ml) melted butter
+ extra
½ cup (125ml) raisins
icing sugar, to dust
Greek yoghurt and honey, to serve.
Method
Preheat the oven to 200°C. Line a large baking tray with baking paper
Combine the apple, sugar and cinnamon in a large frying pan over medium heat. Cover and cook for 10 minutes or until tender. Remove the cover and cook for 4 minutes or until all the liquid has evaporated. Set aside to cool completely.
Place 1 sheet of phyllo on a clean work surface. Brush with melted butter and top with another phyllo sheet. Repeat with remaining butter and phyllo.
Arrange the apple mixture along 1 long side, 8cm in from the edge, and scatter with raisins. Fold the short sides in and roll up to close.
Place on the prepared tray, seamside down. Brush with melted butter and bake for 30 minutes or until golden.
Dust with icing sugar once completely cooled and serve with Greek yoghurt and honey.
