Preheat the oven to 180°C. Line a 20cm x 30cm tray with baking paper.

Heat 1 tbsp (15ml) olive or avocado oil in a large non-stick frying pan over high heat.

Add 1 finely chopped onion and 2 crushed garlic cloves and cook for 5 minutes until soft.

Season. Mix 450g grated baby marrows, ¾ cup (180ml) crumbled Feta cheese, 200g Ricotta cheese and a handful of chopped chives together.

Add the onion mixture. Mix together 6 eggs and 1 cup (250ml) self-raising flour, then add the baby marrow mixture. Season.

Spoon into the prepared tray and bake for about 40 minutes until golden and cooked through.

Garnish with baby herbs (like watercress).
