Baked herby butter chicken

This buttery chicken dish is one both grownups and kids will enjoy.
Serves 4 | Prep 10 min | Bake 50 min
Ingredients
3 cloves garlic, crushed handful parsley, chopped + extra
zest of 1 lemon
1/3 cup (80ml) soft butter salt and pepper
8 pieces mixed chicken (thighs and drumsticks)
2 large handfuls cooked baby potatoes, halved
2 rosemary stalks
2 tbsp (30ml) olive oil
200g pitted green olives
2 large handfuls cherry tomatoes
Method
Preheat the oven to 200°C. Mix the garlic, parsley, lemon zest and butter together and season to taste.
Carefully lift the skin of the chicken portions to make apocket and stuff with the flavoured butter.
Place the chicken in a baking dish, skin-side up with the potatoes and rosemary. Drizzle with oil, season andbake for 30 minutes.
Add the olives and tomatoes and bake for a further 20 minutes, or until the chicken is golden and cooked through. Scatter with parsley before serving.
