BASIC COOKIE DOUGH

Makes 30 biscuits Prep 30 min
Bake 20 min + resting
2¾ cups (680ml) cake flour
¾ cup (180ml) icing sugar + extra
pinch of salt
125g cold butter, cubed
1 extra-large egg
3 tbsp (45ml) water
1 tsp (5ml) vanilla essence
Preheat the oven to 180°C and line a baking tray with baking paper.
Place the flour, icing sugar, salt and butter in a food processor and process until the mixture resembles fine breadcrumbs.
Mix the egg, water and vanilla together. Add to the flour mixture and process until the dough just comes together. Transfer to a lightly floured surface and knead until smooth, but don’t overwork it. Flatten slightly, cover with plastic wrap and refrigerate for 1 hour, or until firm.
Roll the dough out on a lightly floured surface to 5mm thickness. Use cookie cutters to cut shapes from the dough.
Place the cookies on the prepared tray and refrigerate for 10 minutes. Press the leftover dough together and repeat.
Bake biscuits for 10 minutes or until lightly golden, then cool on the tray for 10 minutes before transferring to wire racks to cool completely. Repeat with the remaining dough.
Dust with extra icing sugar just before serving.
