Beef Wellington bites

These mini versions of the classic beef Wellington make for tasty hors d'oeuvres.
Serves 4-6 | Takes 1 hr 10
Ingredients
500g beef steak (like fillet, sirloin or rump), cut into 6 thick strips
30ml olive oil
30ml soy sauce + extra
1 garlic clove, crushed
salt and ground pepper
1 onion, sliced
400g cheese and herb puff pastry
1 egg
15ml milk
sweet chilli sauce, to drizzle
green salad, to serve
Method
Preheat the oven to 200°C. Line a baking tray with baking paper. Marinate the beef in half the oil, soy sauce and garlic for at least 1 hour.
Heat the rest of the oil over high heat and sear the beef for about 5 minutes until browned all over. Season. Remove from the pan and set aside. Add the onion to the same pan and fry for 5 minutes until soft.
Beat the egg and milk together, and brush it over the pastry. Cut in half through the length, then each length into 3 squares. Place a beef strip in the centre of each square. Top with onion and a dollop of sweet chilli sauce. Pinch the edges of the pastry to seal, then brush with egg. Bake for 25-30 minutes until golden brown.
Mix some soy and sweet chilli sauce together and serve with the beef Wellingtons and a green salad.
