Breakfast baked French toast

Spoil your family with this great, sweet breakfast idea, without going to all the effort of making individual slices of French toast.
Serves 6-8 | Takes 55 min
Ingredients
a 35cm French loaf into 1cm thick slices
125ml sultanas
2 sliced bananas on top.
8 eggs
500ml milk
125ml syrup
15ml vanilla essence
5ml ground cinnamon
45ml soft brown sugar
Method
Preheat oven to 200°C. Cut the French loaf into 1cm thick slices, place on a baking tray and bake for 10 minutes until toasted. Pack the toast into 6 x 375ml greased ovenproof dishes. Scatter sultanas and sliced bananas on top.
Beat eggs, milk, syrup and vanilla essence together. Pour over the bread mixture, pressing down with a spatula so all the pieces are evenly soaked. Cover and refrigerate overnight.
Preheat the oven to 160°C. Uncover the dishes and sprinkle over ground cinnamon and soft brown sugar. Bake for about 35 minutes until cooked.
