CHAKALAKA, SAUSAGE AND BEAN TRAY BAKE.jpg

Serves 4 Prep 10 min

Cook 5 min Bake 45 min

1 tbsp (15ml) olive or avocado oil

8 beef sausages

1 red onion, thickly sliced

1 yellow pepper, deseeded, cut into

strips

2 x 410g tins Chakalaka with corn

salt and pepper

420g tin cannellini beans, drained

handful parsley, chopped

Preheat the oven to 180ºC. Heat the oil in a large ovenproof frying pan over medium-high heat. Cook the sausages for 2 minutes each side until browned.

Arrange the onion and pepper around the sausages and pour the Chakalaka over. Season to taste and bake for 40 minutes or until the peppers and onions are soft.

Stir in the cannellini beans and bake for 5 minutes until heated through.

Scatter with parsley before serving.
