Cheesy baked pap

Serves 8 | Takes 50 min
Ingredients
butter, for greasing
750ml water
15ml salt
250ml maize meal
15ml olive or avocado oil
1 onion, chopped
250g mushrooms, sliced
250g diced bacon
410g tin corn kernels
handful parsley, chopped
250g Cheddar cheese, cut into 2cm cubes
250ml cream
250ml milk
50g packet mushroom soup powder
Instructions
Preheat oven to 180°C. Grease a 32cm x 22cm ovenproof dish.Bring the water and salt to a boil over medium heat and cook the maize meal,stirring, for about 15-20 minutes until a stiff porridge forms.
Heat the oil over high heat and sauté the onion, mushrooms and bacon in batches until golden. Mix in the corn and parsley,then mix in the pap and season. Shape into 125ml balls and stuff each one with a block of cheese. Pack into the prepared dish.
Mix the cream, milk and soup powder together and pour over the balls.
Bake for 15-20 minutes until the sauce has thickened slightly.
