Chicken liver bruschetta

Try this healthy, balanced meal, with liver as the star ingredient. Liver is a natural "superfood", rich in nutrients and various vitamins, especially vitamin A.
Serves 4 | Takes 30 min
Ingredients
15ml olive or avocado oil
500g butternut, cut into strips
200g broccoli
15ml butter
45ml water
250g chicken livers
1 red onion, finely sliced
60ml tomato sauce
125ml cream
60ml basil pesto
handful basil, chopped
8 toasted ciabatta slices
Method
Heat half the oil on medium and fry the butternut for 5 minutes until browned. Add the broccoli, butter and water, cover and steam for about 10 minutes until tender. Season.
Heat the rest of the oil on medium-high and fry the chicken livers (breaking up the larger pieces) and onion for about 5-8 minutes, until cooked through. Season. Add the tomato sauce, cream and basil pesto and heat through. Serve on the toasted ciabatta with the vegetables and a scattering of basil.
