Chunky seed and fruit biscuits

These chunky, crunchy cookies are filled with healthy oats, seeds and sweet dried fruit.
Makes 40 | Takes 30 min
Ingredients
250ml (1 cup) Jungle Oats
250ml (1 cup) cake flour
180ml (¾ cup) desiccated coconut
100g pitted dates, chopped
100g dried fruit (like peaches, apricots, pears and nectarines), chopped
125ml (½ cup) sunflower seeds
125g margarine
250ml (1 cup) Demerara sugar
30ml (2T) golden syrup
5ml (1t) bicarbonate of soda
45ml (3T) water
Method
Preheat oven to 180°C. Mix the oats, flour, coconut, fruit and seeds together. Melt the margarine, sugar and syrup over low heat, stirring occasionally. Mix the bicarb and water together and then add to the margarine mixture. Stir the wet ingredients through the dry ingredients until a soft dough forms.
Shape the dough into ping-pong sizes. Place on a greased baking tray, leaving enough rising space in between, and flatten slightly. Bake for about 15 minutes until golden brown. Cool on the tray.
