CORN, BACON AND CHEESE FRITTERS

1 tbsp (15ml) olive or avocado oil
3 rashers streaky bacon, diced
½ small onion, chopped
1 small red pepper, diced
1 clove garlic, chopped
½ cup (125ml) flour, sifted
2 eggs, beaten
½ cup (125ml) buttermilk
100g Cheddar, diced
½ tin (200g) corn, drained
salt and black pepper
olive or avocado oil, for frying
Heat the oil in a frying pan over high heat. Fry the bacon for 3 minutes and add the onion, red pepper and garlic. Fry for a further 3-4 minutes or until the onions are golden. Remove from the heat and set aside.
In a large bowl, combine the flour, eggs, buttermilk, bacon mixture, cheese and corn. Mix well to form a batter and season with salt and pepper.
Heat some oil in a frying pan over high heat and spoon tablespoonfuls of the batter into the pan. Fry for 2-3 minutes on each side, or until golden. Drain on paper towels and set aside.
Once cooled, wrap in wax paper and pack into lunchboxes.
