Creamy potato bake.jpg

Serves 4-6 | Prep 20 min | Bake 1 hr

Ingredients

8 potatoes, thinly sliced

2 onions, thinly sliced

2 cloves garlic, crushed

2 cups (500ml) cream

1 cup (250ml) chicken stock

Method

Preheat the oven to 180°C. Grease a 1½-litre (6 cup) capacity deep baking dish. Layer the potato, followed by a layer of onion into the dish. Season each potato layer with salt and pepper. Repeat until all the potatoes and onions have been used.

Combine the garlic, cream and chicken stock in a large saucepan over high heat. Bring to a simmer. Remove from the heat and pour evenly over the potato mixture.

Bake for 1 hour or until tender. Remove from the heat and set aside for 5 minutes to cool slightly before serving.
