EASY ROAST GAMMON

2kg smoked or cured gammon
2 bay leaves
2 star anise
1 tbsp (15ml) peppercorns
3 tbsp (45ml) whole cloves
For the glaze
4 tbsp (60ml) honey
2 tbsp (30ml) English mustard
powder
2 tbsp (30ml) brown sugar
Place the ham in a large pan, coverwith cold water and drop in the bay eaves, star anise and peppercorns. Bring to a simmer then cover and simmer for 1½ hours. Drain.
Once cool enough to handle, remove the skin of the ham, leaving a layer of fat. Score the fat into a diamond pattern with a sharp knife, and stud the centre of each diamond with a clove.
Heat the oven to 180°C. Place all the glaze ingredients in a pan and gently heat until the sugar has dissolved.
Brush the ham liberally with the mix. Sit the ham on a wire rack in a roasting tray with a few tablespoonfuls of water in the bottom.
Bake the ham for 30-40 minutes, basting with the glaze until golden.
