Energy muffins

These muffins will provide sustained energy for busy work or sporting days.
Makes 18 | Prep 15 min | Bake 25 min + cooling
Ingredients
1¼ cups (310ml) castor sugar
2 cups (500ml) flour
2 tsp (10ml) cinnamon
2 tsp (10ml) baking powder
1 cup (250ml) raisins
2 cups (500ml) grated carrot
1 cup (250ml) grated apple
1 cup (250ml) desiccated coconut
1 cup (250ml) chopped walnuts
3 eggs
1 cup (250ml) vegetable oil
1 tsp (5ml) vanilla essence
icing sugar, to dust
Method
Preheat the oven to 180°C and grease 2 x 12-hole muffin pans with non-stick spray.
Sift the sugar, flour, cinnamon and baking powder into a large bowl. Add the raisins, carrot, apple, coconut and walnuts.
In a separate bowl, beat the eggs, oil and vanilla together.
Add the egg mix to the dry ingredients and fold in until just combined – do not overmix.
Spoon the batter into the muffin pans and bake for 25 minutes or until golden brown.
Cool in the pans and dust with icing sugar before serving.
