FESTIVE ICE CREAM LOAF

Chilling ± 6 hrs
2L good quality vanilla ice cream,
softened
250g strawberries
1 tin (400g) black cherries, pitted
100g mixed nuts, lightly toasted
1 tbsp (15ml) cinnamon
2 tsp (10ml) ginger
½ tsp (2.5 ml) nutmeg
Line a loaf tin with a 2L capacity with wet muslin cloth.
Purée the strawberries and cherries separately in a food processor.
Combine the nuts and spices in a small bowl. Divide the ice cream into3 equal parts.
Mix the strawberries, cherries and nuts each through one part of the ice cream. Return the mixtures to the freezer when not being used. Work swiftly to keep the softened ice cream from melting.
Scoop 500ml of strawberry mixture into the lined loaf tin and level with the back of a ladle. Place in the freezer and freeze until set (about 2-4 hours). Scoop the nut mixture onto the frozen strawberry mixture and level. Freeze again for 2-4 hours. Finish off with the cherry mixture. Ensure that each layer is set before adding the next.
Remove from the freezer, tip out onto a serving plate and carefully remove the muslin cloth. Add fresh strawberries and serve.
