Fish and Chips Gatsby

Gatsbys are a Cape Town tradition, perfect for a shared meal with friends. Although the fillings vary, the chips and chilli sauce are usually non-negotiable!
Serves 4 | Takes 55 min
Ingredients
6 medium potatoes, peeled and cut into
1cm thick chips
vegetable oil for deep frying
30ml fish spice
125ml cornflour
4 skinless fish fillets, like hake,
bones removed
4 hotdog buns
mayonnaise, to spread
hot or sweet chilli sauce, to serve
Method
Cook the chips in salted boiling water for about 5-10 minutes until just tender. Drain and pat dry with kitchen towels. Heat enough vegetable oil for deep frying in a large saucepan over medium heat. Carefully add the chips and deep fry for about 10-15 minutes until golden and cooked through.
Mix the fish spice and cornflour together. Season the fish and coat in the cornflour mixture. Carefully lower the fish into the oil and deep fry for about 5-10 minutes until golden and cooked. Drain on kitchen towel and season.
Spread the buns with mayonnaise and chilli sauce. Stuff with the fish and chips.
