GLOSSY PUMPKIN WEDGES

½ large pumpkin, sliced into
thick wedges
¼ cup (60ml) olive or avocado oil
salt and ground black pepper
3 tbsp (45ml) butter
¼ cup (60ml) honey
handful thyme leaves
Preheat the oven to 200°C.
Place the pumpkin wedges on a baking sheet and drizzle with oil. Season and roast for 20 minutes until soft.
Melt the butter and stir in the honey. Brush the pumpkin wedges with the buttery honey and sprinkle with thyme leaves. Return the wedges to the oven and bake for a further 10 minutes until glossy and golden.
