GRAPE AND BACON SALAD

For the dressing
2 anchovy fillets
1 garlic clove, crushed
1 tsp (5ml) Dijon mustard
2 tbsp (30ml) white wine vinegar
2 tbsp (30ml) honey
½ cup (125ml) olive oil
For the salad
2 whole cos lettuces, leaves separated
300g red seedless grapes
250g crisp diced bacon
100g (1 packet) walnuts, toasted
Parmesan shavings, to serve
1 For the dressing, blitz the anchovy, garlic, mustard, vinegar and honey until smooth.
Pour the oil in a thin stream into the anchovy mixture. If the mixture is too thick, add 2 tbsp
(30ml) water to thin it out.
2 For the salad, pack the lettuce, grapes, bacon, walnuts and Parmesan shavings out on a serving plate. Drizzle the dressing over to serve.
