Greek halloumi salad

Greek halloumi salad.jpg

Serves 4 | Takes 20 min

Ingredients

1 red onion, thinly sliced

80ml red wine vinegar

For the dressing

1 garlic clove, crushed

5ml wholegrain mustard

5ml honey

45ml olive oil

30ml red wine vinegar

For the salad

200g Halloumi cheese, thickly sliced

30ml olive oil

3 salad tomatoes cut into wedges

6 Israeli cucumbers, chopped

100g black olives, pitted

Method

Mix the red onion and vinegar together. Set aside for 15-20 minutes, then drain.

For the dressing, mix all the ingredients together.

For the salad, heat the oil on medium-high and fry the Halloumi for 1-2 minutes per side until golden. Toss the tomatoes, cucumbers, olives and marinated red onion together and serve with the warm Halloumi.
