HONEY AND MUSTARD PORK CHOPS WITH BUTTERMILK MASH

Serves 4 Prep 15 min + marinating Cook 30 min
2 tbsp (30ml) olive or avocado oil
2 tbsp (30ml) honey
2 tbsp (30ml) wholegrain mustard
4 sprigs fresh thyme
juice and rind of 1 lemon
4 pork chops
salt and freshly ground pepper
5 potatoes, peeled and roughly cubed
30g butter
½ cup (125ml) buttermilk
Place the oil, honey, mustard, thyme, lemon juice and rind into a bowl and mix until combined. Set aside.
Season the chops to taste, then allow them to marinate in the honey and mustard mix for 15 minutes.
Bring the potatoes to a boil and cook until soft. Remove from the water and place in a bowl. Add the butter and buttermilk and mash until smooth. Keep warm.
Heat a frying pan until hot and sear the chops on both sides until golden brown. Lower the temperature, then add the remaining marinade and fry until the pork is cooked through.
Serve with mashed potatoand steamed green veg.
