Milk rolls

These creamy bread rolls are especially tasty served with buttermilk butter and grated cheese.
Makes 20 | Takes 55 min
Ingredients
10g packet active dry yeast
825g (5½ cups) cake flour
23ml (1½ T) baking powder
8ml (½ T) salt
3ml (½ t) bicarbonate of soda
60ml (¼ cup) sugar
180ml (¾ cup) butter
125ml (½ cup) lukewarm water
500ml (2 cups) buttermilk butter and cheese, to serve
Method
Mix the yeast, flour, baking powder, salt, bicarb and sugar together. Rub in the butter using your fingertips until the mixture resembles breadcrumbs. Make a well in the centre.
Add the water and buttermilk and mix until it starts to come together. Turn the dough out onto a floured surface and shape into a 4cm-thick disk. Use a 5cm-round cookie cutter to cut out circles and place them on lightly greased baking sheets. Cover and allow to rise in a warm place for 30 minutes until double in volume.
Preheat the oven to 210°C. Bake the rolls for about 10-12 minutes until cooked. Cool on wire racks. Serve with butter and cheese.
