Mince tacos

This Tex-Mex mince recipe is a spicy alternative to your usual bolognese, complementing the cheese and fresh avocado perfectly.
Serves 4-6 l Takes 20 min
Ingredients
15ml olive or avocado oil
500g beef mince
25g tomato paste
1 green pepper, chopped
20ml ground cumin
10ml ground coriander
8 taco shells
100g Cheddar cheese, grated
1 avocado, diced
10 cherry tomatoes, halved
2 spring onions, thinly sliced
handful lettuce leaves
jalapeño chillies, to serve (optional)
Method
Heat the oil on medium high and fry the mince, tomato paste, green pepper, cumin and coriander until browned.
Spoon the mince into the taco shells, along with the cheese, avo, tomatoes, spring onion, lettuce and chillies (if using).
