Mini bacon and cheese Burgers

Makes 8 | Takes 35 min
Ingredients
500g beef mince
1 slice brown bread, crumbled
1 egg, beaten
1 small onion, finely chopped
handful parsley, chopped
8 bacon rashers
olive or avocado oil, for frying
200g Cheddar cheese, thickly sliced
8 small bread rolls, halved
2 tomatoes, sliced
chutney, to serve
mixed baby leaves, to serve (optional)
Method
Mix the mince, bread, egg, onion and parsley together. Season. Shape into 8 patties. Wrap a slice of bacon around each patty and secure with a toothpick. Drizzle with oil, cover and refrigerate until needed (this helps them to firm up).
Preheat oven to 220°C. Heat a thin layer of oil on medium high and cook the patties for about 5 minutes per side until golden (reserve the oil). Pack on a baking tray and top with the Cheddar. Bake until cooked through and the cheese has melted. Alternatively, braai over medium-hot coals.
Place the rolls cut side down in the pan on medium and toast. Make burgers with the buns, patties, chutney, tomatoes and leaves.
Tip: Freeze uncooked patties in between layers of baking paper in an airtight container for up to 3 months. Cook from frozen.
