MINI LAMB PITAS

500g lamb mince
1 egg, beaten
2 tsp (10ml) dried oreganum
½ tsp (3ml) dried chilli flakes
2 garlic cloves, crushed
½ cup (125ml) natural yoghurt
1 tbsp (15ml) olive or avocado oil
4 small pita bread pockets
lettuce, sliced red onion and tomato,
to serve
In a bowl, combine the mince, egg, oreganum, chilli and half the garlic. Mix well and season to taste.
Shape the mixture into 6 flattened patties. Cover and chill until required.
Mix the remaining garlic into the yoghurt and season well.
Heat the oil in a large frying pan and fry the patties for 4-5 minutes, until cooked through. Drain on paper towel.
Cut a slit inside each pita pocket and fill with lettuce, a patty, red onion and tomato.
Top with a dollop of yoghurt before serving.
