2¼ cups (560ml) rolled oats
½ cup (125ml) shredded coconut
1 cup (250ml) cornflakes
½ cup (125ml) chopped dried
apricots
½ cup (125ml) sultanas
½ cup (125ml) chopped glacé
cherries
300g butter, chopped
¼ cup (60ml) brown sugar
¼ cup (60ml) honey
Preheat the oven to 180°C, grease a 3cm deep, 18cm x 28cm (base) slice pan and line with baking paper.
Combine the oats, coconut, cornflakes, apricots, sultanas and cherries in a bowl.
Add the butter, sugar and honey to a saucepan over medium-low heat. Cook, stirring until the butter has melted and the sugar has dissolved. Bring to the boil then reduce heat to low. Simmer for 4-5 minutes or until the mixture has thickened.
Add to the oat mixture, mix well and spread into the prepared pan. Bake for 30-35 minutes or until golden. Cool in the pan, cut into squares, cover and refrigerate for 1 hour or until firm.
