MUSHROOM AND ROSEMARY SPREAD.jpg

2 tbsp (30ml) olive oil

1 punnet button mushrooms,

chopped

2 cloves garlic, chopped

2 tsp (10ml) dried rosemary

1 tsp (5ml) dried chilli flakes, optional

salt and black pepper

1 tub smooth cream cheese

small handful chives, finely chopped

Heat the oil in a frying pan over high heat, add the mushrooms and fry for 6-7 minutes. The heat must be high as the mushrooms need to dry-fry to remove any excess moisture.

Add the garlic and fry for a further 2 minutes. Add the rosemary and chilli and season well. Remove from the heat and set aside to cool.

Mix into the cheese with the chives and adjust seasoning.

Serve with crusty ciabatta bread.
